Egg Drop Soup

I'm always looking for sides to have with Asian food and I got this classic chinese soup recipe from my step-mom. It is way easy and my kids love it! (even Michael who doesn't normally like eggs or anything else besides sugar :))

Egg Drop Soup (serves 5 people)

5 cups chicken broth
1/8 tsp ground ginger
1/8 cup chopped chives
¼ tsp salt
1 ½ Tbl corn starch
3 eggs whites
1 egg yolk

Mix 4 cups chicken broth, ginger, chopped chives, and salt. Mix last cup of chicken broth with cornstarch then add to the mixture. Bring to a boil. In meantime, mix egg whites and yolk with a fork. Once soup is boiling drop egg mixture in the soup until cooked. That's it!!
