Cinnamon-Sugar Muffins

These muffins are a family favorite in our house and are so easy and quick to make. The recipe is taken from the Taste of Home web site and is originally called "French Breakfast Puffs". I changed the name because it seemed more fitting. And, lucky you! We actually had one remaining muffin after breakfast, so I was able to get a picture. And now this lone muffin will go into hiding so the kids won't eat it and I can. ;) These are so very, very good and could easily be served as breakfast, or even as a dessert. Enjoy!

Ingredients:
  • 1/3 cup shortening, margarine, or butter
  • 1 cup sugar, divided
  • 1 egg
  • 1-1/2 cups all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup milk
  • 1 teaspoon ground cinnamon
  • 5 tablespoons butter or margarine, melted

Directions:

In a small bowl, beat shortening (or margarine or butter), 1/2 cup sugar and egg until smooth. Combine the flour, baking powder, salt and nutmeg; add to the sugar mixture alternately with milk.
Fill greased muffin cups two-thirds full. Bake at 350° for 20 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan.
Meanwhile, combine cinnamon and remaining sugar in a shallow bowl. Roll the warm puffs in butter, then in cinnamon-sugar. Serve immediately. Yield: 1 dozen.

Wow, those look good. I really think I'll try them in the very near future. And thanks for the picture- It usually only takes a picture to get me to want to try a new recipe!
