Avocado Dip
1 (16 oz) package frozen corn
2 medium tomatoes (or 3-4 roma tomatoes)
2 small cans sliced black olives
1 bunch green onions (about 3 stalks)
3-4 medium avocados cubed
Seasoning
1/3 cup EVOO
3 TBS apple cider vinegar
1 tsp dried oregano
¼ cup lemon juice (or 2-3 fresh lemons)
¼ cup lime juice
½ tsp pepper
½ tsp salt
5 garlic cloves chopped
In a small bowl mix seasoning ingredients together then set aside.
In a large bowl combine corn, onions and olives then pour seasoning mixture over corn mixture, stir, then set aside to marinate.
Before serving add tomatoes and avocados.

That does sound yummy. What is EVOO??
I think EVOO is abbrivation for Extra Virgin Olive Oil..(am I right Ameila?)
