Zucchini Brownies

I'm not taking credit for these. But I have had a few people ask for this recipe. So thanks to Shannon these have been quite the buzz. So here it is. . .
2 c. shredded zucchini
1/2 cup oil (can use applesauce)
2 tsp. vanilla
2 c. flour
1 1/4 c. sugar
1 tsp. salt
1 1/2 tsp. baking soda
1/4 c. cocoa
*Mix zucchini, oil (or applesauce) and vanilla. Add sugar, flour, salt and soda. Mix by hand. (I use my mixer-I'm lazy.) Spread in greased 9x13 pan. Bake at 350 for 30 minutes.
Fudge Frosting
1 cube butter--melted
3 Tbsp. cocoa
2 c. powdered sugar
1 tsp. vanilla
1 beaten egg (yes--raw, I said the same thing you are thinking "Are you sure?" It's great.)
1 c. chopped nuts (optional)
Mix together and frost brownies.
