Homemade Mac & Cheese

I just made this tonight and need something to do while it cooks so here I am. Cameron LOVES this dinner and requests it frequently. It takes about 30 min. start to finish. And somehow I feel better about the kids eating this, rather than the processed Kraft stuff they love so much. I don't really have measurements so I'm kinda guessing...

Homemade Macaroni and Cheese

2 cups elbow macaroni
2 tbsp. butter
2 tbsp. flour
salt
pepper
about 2 c. milk
grated cheddar cheese

Boil macaroni till tender. White sauce: Make a roux (sp?) by melting butter in a sauce pan. When melted, add flour and mix till bubbly. Add salt and pepper (maybe 1/4 tsp. salt and 1/8 tsp. pepper?). Gradually add milk, stirring constantly, and heat till bubbling and reaches desired consistency (you might want to start with 1 1/2 cups of milk and add more milk if the white sauce is too thick). Taste white sauce and add salt and pepper if needed. Combine white sauce with macaroni and put in a baking dish. Sprinkle grated cheddar cheese on top and bake for 20 minutes on 350.
