Zucchini Bread

2 C sugar
1 C oil
3 eggs
3 C flour
1 tsp salt
1 tsp baking soda
1/4 tsp baking powder
1 Tbsp. cinnamon
2 C Zucchini (grated and raw)
1 C nuts (optional)

Mix together sugar, oil and eggs. Sift flour, salt, soda, baking powder, and cinnamon and add to mixture. Add grated raw zucchini and nuts. Bake in 2 regular sized loaf pans at 350 for 45-60 min. Can also make 4 smaller loaf pans.

I usually double it and make 2 reg loafs and 4 mini ones. Then I can share, but not too much.

I forgot to tell you to coat the baking loafs with cooking spray and sugar.
