Stuffed Zucchini

Here are all the Zucchini recipes you all keep asking me for. Enjoy!

4 med Zucchini
1 lb. ground beef
1 small onion (chopped)
1 garlic clove (minced)
1 tsp. oregano
1/4 C parmesean cheese (grated)
1 can tomato soup

Cut stem off of zucchini. Cut zucchini in half lengthwise; scoop out seeds and pulp leaving 1/4 inch shell. Brown ground beef , onion and garlic. Drain Fat. Add oregano, zucchini pulp, parm cheese and 1/4 of the soup. Arrange zucchini shells in a shallow baking dish. Spoon meat mixture into shells. Spoon remaining soup over top and sprinkle with addition parm cheese. Cover and bake at 375 for 35 to 40 min. Remove cover during the last 5 min.
